Yield: 4 x 1 cup servings

This is a spicy East Indian eggplant dish.

Ingredients:

1 Tbsp oil

1 medium onion, cut into long slices

2 cloves garlic, chopped

1 tsp ginger powder

1/2 tsp cayenne powder

1 tsp cumin powder

1/2 tsp cinnamon powder

1/8 tsp black pepper

1/2 tsp turmeric powder

2 medium tomatoes, cut into 1/2-inch pieces

1 medium eggplant, cut into 1-inch pieces

1/2 tsp sea salt (or salt)

3 Tbsp chopped cilantro


Directions:

Heat oil in a saucepan, add onion and sauté for 2 minutes. Add garlic and sauté for 2 minutes. Add ginger, cayenne, cumin, cinnamon, pepper and turmeric powder and sauté for an additional 2 minutes. Add tomatoes and cook 2 minutes. Add eggplant, salt and cook for 10 minutes or until eggplant is well cooked. Garnish with chopped cilantro.
